I've been maintaining the same starter for eight years - EIGHT - and I keep meticulous hydration logs, pH notes, the whole thing. Last week I bought a bag of King Arthur Unbleached that I've used a hundred times before, and the loaf came out flat. Completely flat. I'm not exaggerating, I have photos.
